The grapes were grown in very select plots of our estate vineyard Finca El Portillo, at 1,100 meters above sea level. Alluvial soils lying on a gravel bed with good permeability and drainage. 100% own vineyards, 100% mechanical harvest during night-time.

Alluvial soils lying on a gravel bed with good permeability and drainage. 100% own vineyards, 100% mechanical harvest during night-time. Viñedos: Drip irrigation is used, allowing the plant to receive the necessary amount of water for optimum development of its foliage. Yield per plant is regulated from 2 to 3 kg. To that end, pruning and thinning techniques are used, and if necessary, some clusters are removed. In all the periods, the enologist and agronomist play a major role working together to achieve outstanding fruit quality. Fermentación: The grapes are harvested after midnight, when temperatures go down to 10°-12°C. After destemming, the berries are transferred to the wine press, where short cold maceration takes place with dry ice (4 hours at 10°C). Gentle pressing (The process for the Chardonnay wine is very similar, differing only in terms of yeast type and the fermentation temperature. After fermentation, the wine is racked by gravity, without using pumps, to stainless steel tanks for storage. clima y suelo: The 2007 vintage offered excellent weather conditions in the upper sections of Valle de Uco, rendering a well-balanced sugar level.It was a mild winter, not very harsh, appropriate to bring about definite budding with great vigor. The spring was dry, very suitable for flowering and fertilization. Bodega El Portillo es una bodega totalmente única por su tecnología de flujo por gravedad. La Bodega posee tres niveles que comienzan con la cava subterránea. La delicadeza en el manejo de la fruta es el principio que guia la disposición por niveles, logrado a través de sutiles inclinaciones que se funden con el paisaje. El flujo por gravedad reemplaza el bombeo de la fruta, y evita que se rompan las semillas y se genere una amargura fenólica en el vino. Esta tecnología también reduce el riesgo de oxidación.
